    We have been running an ecological buffalo farm in Jüterbog (approx. 70 km south of Berlin, Brandenburg) with our own cheese dairy since 1998. We started with 30 female and two male buffalo, today we have a total of 200 animals in our stock, 65 of which are buffalo cows from which we obtain the milk. The buffalo cows are milked twice a day and two to three times a week the buffalo milk is processed in our dairy. Not only the milk and meat of the water buffalo, but the animals themselves are something very special. They are very intelligent, characterful and very affectionate animals with an imposing appearance towards their carers. Keeping them appropriate to the species was out of the question for us from the start. Both the female and the male buffalo calves are lovingly raised by hand and are given the milk they need for good development in the first three months of life.
    Special features of the buffalo milk:
    The taste of the water buffalo milk is sweet with a slightly nutty note. Compared to cow's milk, it has a higher content of iron and calcium as well as vitamins A, B and E. The cholesterol content in the fat content of buffalo milk is approx. 30% less than that of cow's milk. Overall, compared to cow's milk, buffalo milk has an average of 4.8% protein; 7.5% fat; 5.4% lactose, the high proportion of essential amino acids and unsaturated fatty acids, much more nutritious. Many of our customers who are allergic to cow's milk tolerate our buffalo milk products very well, as the milk protein of the buffalo is structurally different from the milk protein of the beef. Buffalo milk mozzarella has a delicate aromatic flavor; There are worlds of taste between it and the cow's milk imitation of the same name. The processing of the buffalo milk is done by hand; Preservatives and stabilizers are generally not used.
    Buffalo meat:
    Our animals are kept ecologically with extensive feeding. They feed on grass, hay, haylage and cereals specially grown for them. This ensures that the animals grow naturally and they only reach maturity for slaughter when they are 2 to 2.5 years old. This is how the delicacy of buffalo meat becomes a pleasure. Buffalo meat with its pleasantly aromatic taste is a very tender meat and also has a high health value, as it has a very low fat and cholesterol content. Because of its short fibers, water buffalo meat has a very tender consistency. After slaughter, the meat first undergoes a maturation process of two to four weeks before it is marketed as fresh meat with a shelf life of 7-14 days. Due to the short shelf life of fresh meat and the sometimes high demand, not all meat parts are always in stock. We therefore ask you to contact us in good time if you would like to order fresh meat, so that we can reserve the desired pieces for you.
    Buffalo sausage and ham:
    In order to preserve the excellent taste properties of buffalo meat for sausage and ham production, climatic chambers were set up on the farm. This enables us to ensure that the sausage and ham ripen slowly and gently under optimal conditions. If you are curious, you can find out more about our products here.
