    The Emmentaler Käserei Leupolz, founded in 1960, is a cooperative supported by 170 farmers. Around 42 million kg of milk are processed in Leupolz each year, 6.0 million kg of which is organic milk. Almost half of the milk is Emmentaler milk, i.e. raw milk that was produced without silage. "Allgäuer Emmentaler" is a protected designation of origin (PDO). The round loaves must mature for at least 90 days.
    Since 1986 we have also been processing around 8,000 kg of Demeter milk from 21 Demeter farms every day.
