It all started in 1998 when a large dairy did not buy their organic milk from the region's ecologically-minded farmers due to lack of interest. “Make my own cheese for me!” Decided the farmers. What was missing was an experienced partner for the cheese dairy. The neighboring Zurwies dairy established the contact between Franz Hiemer and a dairy woman who has learned to be a farmer and who has gained experience as a dairy woman in the Alps for many summers. Franz Hiemer took the risk of building the new cheese kitchen. There were sponsors, friends and a lot of luck on site who helped to make this idea come true. In May 1998 the newly built dairy started producing 300,000 liters of milk a year. Today it is an indispensable gem with 20 very committed employees. Around 1 million liters of annual milk are processed into cheese and fresh products such as quark and yoghurt by six farmers and organic contract partners (Demeter and Bioland), who deliver all their milk to the cheese kitchen. The cheese kitchen pays its organic farmers one of the highest prices in Germany for the delivered milk.
