    The Schneider cheese dairy was founded in 1984 by Hermann Schneider in Bodenfelde. Until it closed in 1983, Mr. Schneider worked as a master cheese maker in the traditional cheese dairy Zitzke & Mascher in Bodenfelde, and with this courageous step into independence, he maintained the long tradition of farmer's hand cheeses in Bodenfelde. Although the dairy is now run by Mr. Ralph Schneider, Mr. Hermann Schneider is still active in the company. Our farmer's hand cheese is a traditional recipe. After a maturing period n sour milk cheese. This is packed from sour milk quark after 4-6 days and delivered. Our hand cheese is available in different sizes of 125 g, 200 g and 300 g. We also offer it in 200 g with noble mold. Ripe cheese tastes spicy and is yellowish through and through. Shortly ripened is mild and still white on the inside. It can be consumed in any degree of ripeness, depending on taste.
