The clinker brick building on the outskirts of Falkenhain was built in 1910. In May 1931, master dairy Albert Zimmermann took over the small dairy. One to two thousand liters of milk were processed in Falkenhain every day. There was a wide range of products: butter, milk, quark, cream, layered cheese and, above all, Zimmermann's Altenburger goat cheese. With the expansion of the company in 1936, cheese production in particular increased. After the war, the son Karl - Heinz Zimmermann had to join the company immediately, as the father did not return from captivity until 1948. With simple means and a cordial relationship with the milk suppliers, milk was processed in the Falkenhain in the 1950s. Small sales took place on Fridays. The farmers handed in an order form for butter, cheese, quark and skimmed milk every week, and on Fridays the goods were ready to be picked up. Dairy work began early in the day. At three o'clock the cream from the day before was pumped into the butter churn so that the "cream grinder" was empty again for the fresh cream. Around five o'clock, the first fresh milk came to the dairy in horse-drawn vehicles, which was then processed into cheese and other products during the course of the day. Albert Zimmermann sold his products in Leipzig's market halls three times a week.
