Sour milk cheese

The WEITSCH cheese was made in 1854 by the Weitsch family in Großschkorlopp (near Leipzig). The original blue-grey Camembert mold gives this sour milk cheese (less than 1% fat in dry matter) its mild character.
Its typical maturation runs from the outside to the inside. This leaves a fresh, white protein core until it is fully ripe. Today this cheese is produced in our company with the Weitsch family.
