Alpine cheese Bregenzerwald Vorarlberg mountain cheese
The traditional hard cheese, with a firm, ivory-colored dough with few perforations, is offered as mild with approx. 4 to 6 months of aging or as spicy with approx. 8 to 10 months of aging.
Very complex in the fragrance with light caramel, roasted almonds and pineapple. Variety is also offered on the palate. Flavors of cream, biscuit, malt and chili are just as pleasing here as the compact, melt-in-the-mouth dough – including crisp, crystalline inclusions.
