Brebirousse is the only soft sheep's cheese in a 4-cornered shape with a red and white moldy rind. During its 2-week maturation, the rind is washed twice with salt water and then the white mold slowly develops on the rind. Supple, spreadable dough with a typical sheep's milk taste.
