Brillat Savarin IGP Refining of Excellence

While the classic Brillat-Savarin is sold fresh, the Brillat-Savarin IGP "Affinage d'Excellence" traditionally matures in cool cellars for three weeks. It is one of the last Brillat Savarin that are still made from raw milk and are hand-scooped. As it matures, it becomes increasingly creamy. Its rind and white paste develop creamy and buttery flavors on the palate and are simply deliciously creamy.
