The maturation of the Brun d'Argental is absolutely exceptional: it matures for more than four weeks on rye straw in a maturation cellar in the town of Allanche. The Maître Fromager does everything to perpetuate this centuries-old know-how, terroir and authenticity, regularly rubbing the cheese with rye straw. This is how the Brun d'Argental develops a unique soft rind with a color that is naturally brown, gray or streaked with blue mould.
