Argental Red Goat

This cheese is made in the same way as Taleggio, but with goat's milk. It also matures in a pine box for about 45 days. This gives it the particularity of maturing beautifully from the outside in, with a smooth rind that is delicate, fine and yellow-pink in colour. A mild, slightly sour taste, with a slightly typical goat cheese aroma.

As it matures, this cheese naturally develops various green or blue molds that are perfectly edible. The formation of this layer of mold is quite normal and contributes to the ripening of the cheese.
