This soft sheep's milk cheese is made by hand. It gets its special taste from the herbs that surround it: Herbs from Provence, rosemary, allspice and juniper give it very special, wonderfully spicy and floral aromas. The cheese paste is quite mild, very fine and smooth.
As it matures, this cheese naturally develops various types of white mold that are perfectly edible. The formation of this layer of mold is quite normal and contributes to the ripening of the cheese.
