Manure of Chavignol Fermier AOP Refining of Excellence

The Crottin de Chavignol "Affinage d'Excellence" is made on a small farm in La Nièvre. Its ripening time is three to four weeks. On the palate, the texture ranges from melt-in-the-mouth to dry and brittle. Its fine goat flavors are subtle at first but become more intense while maintaining a balanced feel found only in Crottin de Chavignol. It has a pretty, bluish bark.

As it matures, this cheese naturally develops different molds that are perfectly edible. The formation of this layer of mold is quite normal and contributes to the ripening of the cheese.
