Creation of our cheese refiner.
The truffles are worked in two thin strips in the mild and very fresh unripened cheese that we use for this exceptional recipe. Then the cheese matures for 2 weeks in our ripening cellars. During this time, the mold rind forms, thanks to which it develops its strong taste.
