The history of the Fourme d'Ambert goes back at least to the 8th century.
However, it was probably made in the times of the Averni before the conquest of Julius Caesar. Its origin, in the Central Massif, is characterized by warm summers and long, cold winters. The milk is obtained up to 1600m altitude. During manufacture, the Fourme is provided with air ducts in order to
to allow the development of the noble mushroom inside. Fourme d'Ambert is one of the mildest varieties in the blue cheese range. Distinctive nutty-fruity, creamy, mild taste.
