From the Vaud Alpine region. It has been made here since the 12th century only from May to October in around 130 chalets at an altitude of 1,000 - 2,000 m. The master cheesemakers make it from the aromatic milk of the summer pastures directly over a wood fire in a copper kettle. Each loaf is given at least 4.5 months to mature. This cheese specialty with the AOP seal of approval is guaranteed to be free from artificial additives and genetic engineering.
