The Nut of Argental

As its name suggests, the Noix d'Argental matures with nut liqueur. This tommette is shaped using a mold that gives it its famous regular and concentric stripes. They are reminiscent of a wicker basket. During the 6-week maturation in the damp cellar, the cheese is rubbed 3 times with nut liqueur. This comes from the distillery in the city of Sarlat La Distillerie du Périgord.
It is thanks to this liqueur that Tommette gets its characteristic brown color and subtle nut aroma.
The texture is creamy and melting. The ivory mass is soft and delicate.
