Exquis is a type of vineyard cheese from the Lyonnais that contains 72% fat in the dry matter, but only 38% fat absolute. The manufacturing process gives this cheese a fine and supple paste, a beautiful white moldy rind and a particular taste of butter and cream. A true delight for gourmets and connoisseurs alike.
