This mountain cheese is made with raw whole milk. The "Affinage d'Excellence" raclette unfolds all the aroma of the raw milk from the mountain pastures. It is made in copper vats and slowly matures on spruce boards, making it an exceptional product with a melt-in-the-mouth, fruity paste. The "Affinage d'Excellence" raclette is matured for at least 12 weeks.

The Affinage d'Excellence raclette cheese is available from October to April.
The Sapin Noir is available from the beginning of May to the end of September.
