Zillertal mountain cheese

Fresh hay, peanuts and passion fruit are present from the start. The scent of biscuit, light caramel and buttermilk fills the air as time goes on. The fruity nature of this cheese is strengthened on the palate, especially by passion fruit and hay flowers, harmoniously complemented by aromas of roasted white bread, dark chocolate and yoghurt. The compact dough melts wonderfully and develops a subtle juiciness. The duet of sweetness and a fine acid kick also ensures an animating finale.
