The “Gavotin à la Truffe” is a soft cheese with a white noble mold rind that is cheesed in the French Haute-Savoie at 700 m. Its curd is flavored with Saint-Jean truffles. After demolding, the cheeses are dry salted and sprayed with Penicillium Camemberti to allow the noble fungus to develop. 250 g loaves are available.
