The name of dry sardine fish is taken from the island of Sardinia in Italy, this type of fish was very abundant in this island in the past, that is why it is named after this.
Sardines are oily fish with high protein and vitamins. And they are part of the northern herring family, sardines also exist in Iran and are caught in the southern sea of the Persian Gulf near the coast and shallow parts of the sea.
The characteristics of dry sardines are as follows:
It has a scaly ventral keel.
It has short fins.
Its scales are perforated.
It has a mole on its dorsal fin.
It has a short denominator fin.
The dry sardine fishing season is from the first of October to the second half of May. The cities of Parsian, Bandarlange, Qeshm and Jask are the main fishing areas for this small fish.
After Qeshm, Jask ranks second in sardine fishing in Hormozgan.
Sardine fishing is done by two-boat fishing method, in this method, two boats side by side using fishing tools and the efforts of sailors catch this kind of water, and this traditional fishing method causes more sailors to be employed than other fishing methods.
Sardines are also used in dried form. Among the points that must be observed in drying sardines, the following can be mentioned:
Sardines are very sensitive to spoilage agents due to their soft texture. If the process of drying fish or transporting it is not done quickly, it will lose its food quality.
The fish must be fresh, so rotten fish is not suitable for drying because it causes damage and spoilage of the healthy fish next to it.
To completely dry fish, two methods of drying fish by ground method or drying fish by air are usually used. This small fish must be placed under direct sunlight for ten days to dry. During this time, the fish is turned upside down so that the fish dries faster and with better quality.

Dry sardines have many uses compared to their very small size, which can be mentioned as follows:
Fish powder production factories: Dry sardine fish is powdered in these factories and used to produce animal and poultry food and fertilizer for agriculture and gardens.
Edible uses: Dried sardine fish is used in the preparation of many foods, including edible sauce, Mahiyaveh, Yes Mahi, Sur, etc. One of the best traditional dishes of this region, which is obtained by this fish, is Mahiyave. Mahwah or Mahiyaveh, which is called Meshaweh in Arabic, is considered as a food in the southern cities of Fars and Hormozgan provinces, except for the coastal areas of Bandarlange.
Animal use: dried sardine fish is used as livestock and poultry feed, aquatic feed due to its high nutritional value and protein.
Fish oil: dried sardine fish oil is used for health and cosmetic purposes and preparation of agricultural fertilizer, etc.
