Rapeseed (Brassica napus) is one of the important oilseed plants in temperate regions and has a relatively wide range of climatic adaptation. Rapeseed contains 25-55% oil, 18-24% protein and 12-20% skin. The modified variety of rapeseed, which is called canola today, has a lower amount of erucic acid and glucosinolate, and due to the lower content of anti-nutritional substances, it is more suitable for human and monogastric consumption than the non-modified variety or the same rapeseed.
