Sodium benzoate

Description: This substance is a benzoic acid salt with a chemical formula NaC ۶ H ۵ CO and is a water-soluble form that can be produced from a combination of sodium hydroxide and benzoic acid. Sodium benzoate is obtained by neutralizing benzoic acid with sodium hydroxide. Benzoic acid is found in small amounts in plums, tomatoes, cinnamon, cloves, and apples. Although benzoic acid itself is a more effective preservative, sodium benzoate is usually used as a food preservative because benzoic acid is not well dissolved in water. The International Chemical Safety Program did not detect any adverse effects at doses (0–5 mg / kg body weight). Uses Sodium benzoate is a food preservative and prevents the activity of bacteria and fungi in an acidic environment. It is most commonly used in acidic foods such as salad dressings, carbonated drinks, jams and juices, pickles, and sauces. It is also used in other substances such as some medicines and shampoos. Sodium benzoate is indicated on the product by the same name, or E211. It is also used in fireworks as rocket fuel because it burns rapidly and produces a whistle. Food storage mechanism This mechanism begins with the uptake of benzoic acid by the cell. If the cell's pH is reduced to 2 or less, the process of glucose fermentation by phosphofructokinas is reduced to 1%.
