The Via Aurelia our finest cheese from Geifertshofen! Made according to the recipe for Swiss planed cheese (Sbrinz), it matures in our brick vaulted cellars for at least an incredible 18 months. During this unusually long maturation period, it develops an incomparable, noble aroma with a slightly fruity note. It goes very well with full-bodied red wines or dessert wines, but can also be used for an outstanding pasta dish or risotto.
From Via Aurelia we can only make a limited number of batches of 30 loaves each year. So count yourself lucky if you can enjoy a nice piece of this exquisite specialty!
