Our medium-aged wine farmer's cheese is a cheese that has been partially mite-ripened for six months and is made from fresh whole hay milk g.t.S. is made with natural fat content. In our brick-vaulted cellars, the wine farmer's cheese is treated regularly and with particular care with salt water and wine yeast, so that a dark reddish, partly rustic natural rind with natural cheese mites develops. The cheese mites give the "middle aged" a spicy aroma as it ages, its cheese paste is golden and supple.
We recommend full-bodied and dense red wines from the barrique to go with the medium-aged wine farmer's cheese - simply wonderful - a top product for cheese lovers!
