St. Barbara middle age

The St. Barbara is a very interesting variety of the creamy, young St. Barbara with red culture rind, which is made from fresh whole milk and fresh cream.
This specialty matures for at least six months in our brick vaulted cellars. Here it is treated regularly and with special care with salt water, so that a reddish, partly rustic and wild natural rind develops, which gives it a racy, spicy aroma with age. The cheese paste is caramel-like and has a few small holes.
A fruity sweet wine or full-bodied, dense red wines from the barrique – simply wonderful.
The St. Barbara medium-old was awarded the Quality Prize 2019/2020 by the Association for Artisanal Milk Processing.
