Swabian raclette

A fine semi-hard cheese that is rind-ripened for at least four to five months and is similar in character to Swiss raclette. It is elegant and creamy in the dough, aromatic and spicy and is also ideal for au gratin or for fondue. Its aging takes place in our brick vaulted cellars. Here its natural bark is regularly cared for with salt water according to the degree of ripeness. Visually, it impresses with the embossing with the striking cow head of our horned cows, which gives this specialty a noble and unmistakable appearance.
An extraordinary treat in terms of taste - an absolute highlight for the winter season! We can recommend a Pinot Noir as a wine here.
