This fine-spicy semi-hard cheese made from Demeter hay milk with a wonderful aroma and an interesting brown-purple to black natural rind is an absolute cheese specialty and an eye-catcher on every cheese counter! It is regularly cared for with a special mixture of red wine yeast and salt. This is how its unmistakable aroma and typical dark color develop during the four-month maturing period in our brick vaulted cellars. Its cheese dough is nice and supple and usually has a few small holes.
Wengert cheese has a fine, noble, aromatic taste. If you let it mature for a few more weeks, its aroma becomes increasingly strong and spicy.
