A creamy, spicy, semi-hard semi-hard cheese made from hay milk (raw milk). Its recipe is based on that of a mountain cheese and develops a spicy note with age. Even with a longer maturing period, the cheese remains supple and usually has some nice maturing holes.
The root sepp is the latest hay milk cheese from Geifertshofen. It is named after the root farm of the Gall family's hay milk farm in Geifertshofen, because the first batch was made from their hay milk.
As an accompaniment, we recommend fine white wines such as Gewürztraminer or Weißherbst.
The root sepp was awarded the Silver Quality Prize 2019/2020 by the Association for Artisan Milk Processing.
