Bühlertal village cheese

A fine, creamy semi-hard cheese similar to Swiss raclette, which tastes mildly spicy to strongly aromatic, depending on the degree of ripeness. It is very suitable for melting (raclette, cheese spaetzle, fondue, gratin, lasagne). Of course, it tastes at least as good with a hearty farmer's bread and a glass of dry red wine.
It matures in our brick vaulted cellars for at least three months. Here it is regularly cared for with salt water according to its degree of maturity. We named this cheese after the idyllic Bühlertal in Hohenlohe, on the edge of which lies the village of Geifertshofen, which gives the entire region its name. We can recommend a Pinot Noir as a wine here.
