Swabian Trollinger cheese
Another representative of our “witty ones”. A fine, mildly spicy semi-hard cheese with a creamy consistency and a pleasant, fruity taste of red wine. The Trollinger cheese gets its wonderful aroma from several days of bathing in "Heilbronner Trollinger", an old Swabian red wine variety from the Stutz organic winery.
In a special process we developed, we put the cheese in Trollinger red wine for a while and let it mature in our brick vaulted cellars. During this time it develops its characteristic aroma and beautiful purplish-grey rind (sometimes overgrown with fine white mold).
Trollinger is the most widespread grape variety in Württemberg and is usually made into light quality wines.
