The beer cheese is the third in the group of our "spirit-types": matured for a long time, flavorful, aromatic and wonderfully creamy. First we let it pre-mature in original organic black beer from the Härtsfeld family brewery Held. It is then stored in our brick vault cellars for at least three months, where it is treated with great care using only salt water.
During this time, this cheese develops its intense red-brown natural rind, sometimes slightly overgrown with white milk mold. Its golden-yellow cheese paste is finely creamy and usually has individual small ripening holes. In the original Geifertshofen black beer cheese, the finely tart, malty spiciness of the dark beer combines in the best way with the cheese aromas reminiscent of mountain cheese to create an unexpected taste experience!
