Alma Alpkäse is a seasonal cheese specialty from Vorarlberg, which is harvested in the Vorarlberg Alps during the alpine summer from May to September.
The cheese gets its special taste from the daily fresh hay milk from cows that graze all summer on the untouched alpine meadows at over 1,100 meters above sea level with up to 50 alpine herbs. According to old tradition, alpine milk is processed into cheese directly on the alp by the alpine dairymen, which then matures for several months on spruce boards to develop its unique taste.
