Brocciu is Corsica's best-known cheese specialty and remains the only product from the island's livestock industry to be certified. After making the cheese and obtaining the whey, the latter is added to the fresh milk and heated to 80-90°C. Now comes the magic moment when the brocciu appears on the surface of the mixture. Now all the Schäfer cheese maker has to do is pour the delicious milk froth into the colanders by hand. This cheese is special because it is the only AOP cheese made with whey. It can be made from sheep's and/or goat's milk. It is generally considered to be fresh cheese, although it can also be found cured, when it is called "Brocciu Passu".

The Brocciu has been marked with the European seal AOP (Protected Designation of Origin) since 1998.

The red European AOP seal (appellation d'origine protégée = "protected designation of origin") guarantees the consumer that all production stages take place exclusively in the defined geographical area of ​​​​the designation, from the production of the milk to the maturing of the cheese.

In France, 45 types of cheese, 3 types of butter and 2 types of cream are labeled with the European seal "AOP".
