Red Buffalo from Argental

A creation of our cheese master.
After the success of the Brebirousse and Vacherousse cheeses and the promising start of the Bufflonne d'Argental, Fromi's master affineur, Vincent Christophe, decided to develop a new cheese: the Bufflonne Rousse, made from fresh buffalo whole milk.
After salting, the bark is gently washed with salt water and lightly colored with natural annatto. During the ripening process, the rind forms and takes on a slightly orange colour. It is then covered with a fine down of white Geotrichums. The mildness, creaminess and richness of buffalo milk are combined here. The slightly sour taste will delight the palate of young and old
