Hay milk cream cheese

Cream cheese is the only cheese that does not require any maturing time and can be enjoyed immediately after it is made. Its texture is very soft and creamy. Fine yoghurt or buttermilk aromas are typical. Varieties with a higher fat level have a creamy character. Cream cheese is easy to make.
Milk is coagulated by adding lactic acid bacteria, sometimes rennet. After cutting the curd into walnut-sized pieces, the mass is poured into molds and the whey drains off. It is often refined with fresh herbs or flowers.
