Wheat Flour Type 550

The wheat flour type 550 is made from pure soft wheat and consists of the inner layers of the endosperm and a few components towards the edge. The mineral content is higher than in type 405, the protein structure in the dough is more flexible. Vitamin and enzyme content are increased, the baked goods have larger pores. It is very versatile and is suitable for yeast dough and cakes, but especially for small baked goods such as rolls, pretzels and white bread.
