Kentucky Martin powder

Ingredients needed to prepare Kentucky chicken:

Chicken fillet or chicken pieces 400 grams

Cold water 200 grams (1 cup)

2 cups of ice water

Frying oil as needed

Preparation:

Small chicken fillets are cooked well within 4 to 8 minutes of frying, but if you use large pieces of chicken, half-cook them, or pound them a little until they are thin.
Put Martin's flavoring powder in a bowl. Add a cup of cold water and mix until it becomes uniform. Immerse the chicken fillets in the flavoring solution until all parts are covered. Then put it in the refrigerator for 1 to 2 hours until the fillets are well flavored.
Put the Kentucky Martin powder in a container. Remove the fillets one by one from the flavoring solution and roll them in Kentucky powder and knead with quick movements of your fingertips until it forms flakes. Then freeze the fillet very quickly in a container of water and take it out so that the surface of the fillet is moistened again, then roll it again in Kentucky powder and give it a scaly shape with your fingertips.

Cooking:

Fry the prepared fillets in a lot of hot oil on a medium flame until the desired golden color is obtained. The heat of the flame should be such that during the entire frying time, the oil boils slowly and the fillets take about 4 to 8 minutes to be completely cooked.
