St Barbara

St. Barbara is a creamy semi-hard cheese with red culture rind, made from fresh whole milk and fresh cream. In terms of type, it corresponds to a French-style butter cheese.
It matures in our brick vaulted cellars for at least three months. Here it is treated regularly and with particular care with salt water, so that a reddish natural rind develops, which gives it its pleasantly aromatic-spicy taste and its typical aroma. The cheese dough is wonderfully creamy and has few small holes.
As a particularly harmonious wine, we can recommend a Pinot Gris for our St. Barbara.
The St. Barbara was awarded the audience prize 2019/2020 by the association for artisanal milk processing.
